The character of our wines is due to a combination of the albariza soil that has given Jerez Region wines worldwide acclaim, the grape varieties we select and the care and attention we devote to our vines.
Our red wines are the product of a blend of different grape varieties which lend them greater complexity and a more balanced aroma. As our CEO, Miguel Domecq, has aptly said, “It’s virtually impossible to achieve the complexity of sound and balanced harmony of an orchestra with just one single instrument”.
SELECTIVE GRAPE HARVESTING
Each plot of our vineyard and each grape variety is harvested separately at the optimal state of ripeness. The vineyard’s proximity to the winery ensures that the quality of the incoming grapes is preserved. Night harvesting allows the grapes to remain cool during transport and, once at the wine press, the bunches that don’t display optimal ripeness are manually removed at a sorting table.
As a medium-sized winery, we have a winemaking capacity of 250,000 bottles per year, including both red and white. This is what allows us to manage our production with both an artisan approach while also using advanced technology. Fermentation takes place in temperature-controlled stainless steel tanks and with constant supervision by both the Cellar Master and our certified oenologist.
Our red and white wines are aged only in carefully selected, young French oak barrels which convey just the right amount of wood phenols to our wines. After oaking, our wines are bottle-aged for the time needed for fining. The barrel and bottle cellars for ageing as well as the storage warehouse all remain temperature controlled at 18ºC.
BOTTLED ON THE ESTATE
All of our wines are bottled on the estate, at the MIGUEL DOMECQ winery, known as the CORTIJO DE TORRECERA, where the vineyards are located and where all our grapes are exclusively sourced.
